VIVA! LA TERRAZZA SUL LAGO
Viviana Varese, chef stellata ed imprenditrice dell’alta ristorazione, non si ferma. Sempre creativa e piena di entusiasmo, dopo il progetto Delivery “VIVA a casa”, intrapreso durante il lockdown, ha dato vita a VIVA La Terrazza sul Lago: un temporary Restaurant a Manerba del Garda, coinvolgendo la sua brigata perché fosse protagonista insieme a lei. È un’osteria contemporanea, così la definisce Viviana, con una vista mozzafiato sul lago.
Il luogo è incantevole. Grandi spazi all’aria aperta e a stretto contatto con la natura invitano gli ospiti a degustare, in tutta tranquillità e sicurezza, i suoi piatti storici e quelli che esaltano la sua cucina mediterranea e tante novità come la Melanzana C-19 e il suo mitico risotto cacio, pepe e limone nero che ha ribattezzato “Rinascita”.
E, poi, c’è l’interessante proposta aperitivo con “i cicchetti”, tanti e diversi, dai Presidi Slow Food alle eccellenze locali, il tutto accompagnato da drink ricercati, e vini di cantine del territorio.
«Ho sempre cercato di reagire», racconta la chef stellata. «Ho pensato soprattutto a quanto il nostro settore, la ristorazione, fosse stato colpito da questa pandemia. Continuo a credere che sia necessario reinventarsi, riuscire a differenziare la nostra attività per uscire dall’emergenza… Creare, inventare e cambiare, pur conservando gli insegnamenti che questi mesi difficili ci hanno lasciato».
Condivisione e famiglia sono i valori fondamentali nel suo manifesto. «Antonella, mia sorella, e Chef Fabio Mazzolini, mi hanno sostenuta sin dall’inizio di questa avventura e sicuramente l’idea di sentirmi a casa è stato per me di grande aiuto in questo periodo. L’obiettivo è ripartire.
«La gente ha voglia di trascorrere del tempo all’aria aperta, soprattutto chi è stato sempre in città durante la quarantena», afferma Viviana. «Oggi è ancora più sentito il desiderio di immergersi nella natura anche solo per il weekend e staccare la spina dalla vita frenetica della città, godendo degli spazi aperti e di una location mozzafiato».
VIVA la Terrazza sul Lago sarà aperta da giugno al 15 ottobre per l’aperitivo o per cena.

Viviana Varese, starred chef and haute cuisine entrepreneur, does not stop. Always creative and full of enthusiasm, after the delivery project “VIVA a casa”, undertaken during the lockdown, she created VIVA La Terrazza Sul Lago: a temporary Restaurant in Manerba del Garda, involving her team to be the main characters with her. It is a contemporary tavern, as Viviana defines it, with a breathtaking view of the Garda lake. The place is enchanting. Large spaces in the open air and in close contact with nature invite guests to taste, in complete tranquillity and safety, its historical dishes and those that enhance its Mediterranean cuisine and many news such as the Aubergine C-19 and its mythical risotto cacio, pepper and black lemon which has been renamed “Rinascita”.
Also, a very interesting appetiser proposed with “Cicchetti”, many and different, from Presidi Slow Food to local excellence, all accompanied by refined drinks, local wines and exclusive production of juices. “I’ve always tried to react,” says the starred chef. «I thought especially how much our sector, the restaurants, had been affected by this pandemic. I continue to believe that it’s a necessity to reinvent ourselves, to be able to differentiate our business in order to find an escape out of the emergency … Create, invent and change, while retaining the teachings that these difficult months have left us “. Sharing and family are fundamental values in its manifesto. “Antonella, my sister, and Chef Fabio Mazzolini have supported me since the beginning of this adventure and certainly the idea of feeling at home has been of great help to me during this period. The goal is to start again. “People want to spend time outdoors, especially those who have always been in the city during the quarantine,” says Viviana. “Today the desire to immerse yourself in nature became much stronger, even just for the weekend and to unplug from the hectic life of the city by enjoying the open spaces and a breathtaking location “.
